Zucchini rolls with cured ham and plant-based cheese, crispy on the outside and melting on the inside, and it's also gluten-free and lactose-free! A delicious new way to enjoy zucchini.
Preparation of the zucchini Preheat your oven to 180°C. Slice the zucchini lengthwise using a mandoline, then quickly grill them in a pan with a drizzle of olive oil and a bit of salt (not too long, as they should not become too soft).
Rolling Once grilled, place 5 to 6 slices of zucchini on a cutting board, slightly overlapping them. Add some cured ham on top, followed by the plant-based cheese, and finish with another layer of zucchini slices. Roll it all tightly.
Coating In a plate, put a small pile of breadcrumbs. Dip the rolled zucchini in it before placing it on a baking sheet lined with parchment paper. Repeat the process until all the zucchini slices are used up.
Finish Drizzle your rolls with a bit of olive oil and bake for 20 minutes at 180°C.
