A zucchini bread, a recipe I have been making for years, and I realize that I have never published it on my blog. I am taking advantage of the zucchini season, and these are from the garden, to make this delicious zucchini bread that is eaten cold, accompanied by a salad or a yogurt sauce.
Preheat your oven to 180°C. Grate 750 g of zucchini, leaving the skin on.
Then squeeze the chopped zucchini to remove the water. Add the tablespoon of flour, the two tablespoons of olive oil, salt, and pepper. Mix well.
To finish, beat the 6 eggs into an omelet and add them to the grated zucchini. Do the same with the chopped parsley. Grease or line a loaf pan with parchment paper. Pour in the mixture and bake for approximately 45 minutes.
