Yeast Blinis Recipe

This easy blini recipe is a foolproof way to make authentic yeast blinis.

Ingredients
 400 Milk
 175 Water
 10 Active dry yeast
 225 Flour
 25 Salt
 1 Sugar
 2 Vegetable oil for frying
 1 Egg
 5 Vanilla extract

Pour the milk and water into a small saucepan and heat over medium-high heat to 45 degrees (use a cooking thermometer to check the temperature). Remove from heat and transfer to a large heat-resistant bowl.

Add the yeast, salt, and sugar, whisk together by hand, and let it rest for about 5 minutes for the yeast to activate. Sift the flour through a flour sifter, add it to the main mixture, and stir.

Beat the egg for an omelette, add to the mixture. Pour in the vanilla extract and oil, and mix.

Cover the bowl with plastic wrap and place it in a warm area away from drafts to let it rest for 30 to 45 minutes. The dough will approximately double in size.

To cook the blinis, gently mix the batter with a whisk. Heat a frying pan over medium heat and brush it with oil using a silicone brush.

Pour a ladle of batter into the pan, swirl it to coat the entire pan, and cook until bubbles appear on the surface and the bottom becomes golden, about 1 to 2 minutes. Flip the pancakes and cook the other side for about 1 to 2 minutes. Transfer the pancakes to a warm plate.

Repeat until the batter is used up, brushing the pan before adding the batter.

To finish, serve the blinis with jam or honey, or enjoy them savory with smoked salmon or black-red caviar.
