West Indian Chicken Colombo Recipe

A delight this true Caribbean chicken colombo. Tender and rich in flavor, I recommend this easy and quick recipe to prepare your chicken. Some also make this recipe with pork in colombo sauce. Feel free to give it a try!

Ingredients
 1 Chicken
 6 cloves Garlic
 1 clove Shallot
 1 Onion
 1 Parsley
 1 Thyme
 1 Red pepper
 1 Zucchini
 1 Eggplant
 3 Potato
 1 Lemon
 15 Unsweetened coconut milk (optional)
 ½ Coriander
 ½ Anise
 Peanut oil
 Vinegar
 Salt
 Pepper

Preparation of the chicken Cut the chicken into pieces, wash it with vinegar or lemon and water. Dry, salt (coarse salt if possible), pepper, add crushed garlic, half of the finely chopped chili, minced shallot, 1/2 teaspoon of coriander and anise, add a little vinegar and let marinate for at least 1 hour.

Cooking the chicken In a pot or a large pan, pour a little oil, another crushed garlic clove, and the remaining coriander and anise. Sauté the chicken until it is golden brown on each side, occasionally basting with the marinade and a little water.

Adding the spices and vegetables When the chicken is golden, add the chopped onion and the crushed spices. Stir well. Add the eggplant, zucchini, and the potatoes, washed and cut into pieces. Pour a little water and let cook for 20 minutes.

Add the spice mix or the curry diluted in a little water, mix well, and let it cook for 15 minutes.

At the end of cooking, add the coconut milk. Then, 5 minutes before the end of cooking, add the lemon juice.
