Here is a delicious vegetable dish!

Ingredients
 2 Sweet potato
 4 Carrot
 400 Salsify
 300 Drained natural chickpeas
 2 Pear
 1 vegetable broth
 Parsley
 30 Butter
 Freshly ground pepper
 5 Lemon juice
Directions

Fill a large bowl with about a liter of water and add the lemon juice. Peel the salsify with a vegetable peeler under water, then plunge them into the lemon water. Cut the salsify into sticks and cook them for 15 minutes in a large pot of salted water. Drain them.

Peel the sweet potatoes and clean the carrots (no need to peel them). Cut the vegetables into sticks. Chop the parsley.

Pour the broth into a large pot, add the sweet potatoes and carrots, season with pepper, and let simmer for about 30 minutes.

Peel the pears and set aside half of one. Cut the remaining pears into sticks.

Add to the pot the salsify, the pears (the half and the sticks) and the chickpeas.

To finish, cook for another 15 minutes, and at the end of cooking, add the butter and the parsley. Mix well. Serve hot!
