The vegetarian leek tart is a comforting classic, perfect for family or friendly gatherings. A recipe enjoyed during my vacations, it’s ideal for a dinner appetizer while watching a beautiful sunset. This simple recipe highlights the delicate flavor of leeks with a creamy filling. The blend of eggs, milk, and cheese adds a delightful indulgence, while nutmeg subtly enhances the flavors. Homemade pastry will add your personal touch.
Rinse the leeks and slice them into rounds. Chop the shallot. In a skillet over medium heat, melt the butter. Sauté the shallot for a few minutes, then add the leeks. Cook for about twenty minutes.
Preheat the oven to 170°C. Place the pastry in an ovenproof dish. Prick the bottom of the tart. In the same pan, add the milk, then the eggs and cheese. Mix everything together.
To finish, season with salt, pepper, and add nutmeg. Pour everything onto the pastry. Bake for 40 minutes.
