Today I suggest a frittata - an Italian specialty that resembles an omelette, baked in the oven, garnished with various ingredients. I used vegetables, bacon, mushrooms, and cheese. But you can top it according to your preference. I made a large version to share, but it is also possible to make individual versions or bite-sized pieces for appetizers.
Prepare all the ingredients. Peel and chop the onion. Remove the seeds from the bell pepper and cut it into small pieces. Slice the mushrooms.
Heat a pan with olive oil. Add the onion and sauté for 2 minutes, stirring.
Add the bacon and continue cooking for another 3-4 minutes, stirring often.
Add the bell pepper and the mushrooms (keep 12 slices of mushrooms for garnish), along with salt and pepper. Mix well and cook for another 10 minutes. Allow to cool slightly.
Preheat the oven to 180°C with static heat. Line a 22 cm square pan with parchment paper.
In a mixing bowl, beat the eggs until well combined. Add grated cheese, salt, and pepper to taste. Mix well.
Add the vegetables to the bacon and mix again to combine.
Pour the mixture into the mold and spread it evenly. Place the reserved mushroom slices on the surface.
Bake and cook for 35 minutes or until the frittata is set and golden.
To finish, serve warm or cold, as is or with a bit of green salad.
