Veal Tartare with Green Asparagus and Clams

 430 Veal (loin)
 75 Button mushroom
 150 Green asparagus
 150 Meat from whole clams or previously cooked sea almonds.
 40 Shallot
 10 Chives
 1 Black sesame
 40 Toasted pine nuts
 5 Classic vinaigrette (peanut oil, sherry vinegar, salt, pepper)
 4 Oyster sauce
 1 Soy sauce
 1 Lime juice
 1 Chopped chives
 3 Ground black pepper
 1 Salt
 Grilled crouton
Directions

Cut the raw veal into small cubes and slice the mushrooms very thinly. Using a peeler, make tagliatelle from the asparagus, then add the whole clams.

Mix. Add the finely chopped shallots and chives.

Mix gently again, then place in the refrigerator.

Two hours before serving, and not more to avoid overcooking the veal, mix all the ingredients (sesame, pine nuts, dressing, oyster sauce, salt, pepper, soy sauce, lemon, and chives) with the veal and clam tartare.

To finish, decorate with small croutons, mushroom slices, and a bit of chives.
