The traditional veal blanquette is a classic recipe, prepared with veal, vegetables (carrots, mushrooms, onions...) and a white sauce made with heavy cream and white wine. Here is an easy and family-friendly recipe for veal blanquette using a pressure cooker.
Cut the meat into pieces (or ask your butcher to do it).
Preparation of the vegetables. Wash, peel, and cut the carrots. Slice them into rounds. Peel and chop the onion. Wash, remove the stems from the mushrooms, and slice them.
Cooking Heat the butter in the cooking pot. Sauté the onion on the "Sauté" setting for 4 minutes. Add the meat and sear for 3 minutes on each side on the "Sauté" setting.
Sprinkle with flour and mix.
Add the white wine. Add the carrots and the mushrooms.
Simmer on "Pressure Cook" mode for 45 minutes.
Preparation of the cream In a bowl, mix the cream, the egg yolks, and the lemon juice. Add this sauce to the meat at the end of cooking and mix. Heat everything in "Keep Warm" mode for 5 minutes.
