 2 Shallot
 1 Butter
 1 pinch Flour
 1 White wine
 1 Herb bouquet

For the sauce
 1 Egg yolk
 20 Liquid cream

Preparation of the ingredients In a pot, sweat 2 shallots with butter. Add and brown the meat for 5 minutes while stirring.
