This is THE socca recipe you must try! It's a real treat! It's a traditional recipe, very easy to make, I highly recommend it!
In a large bowl, mix the chickpea flour and water. Add the olive oil and salt.
Grease a dish about 30 cm in diameter with a paper towel and place it in the preheated oven at 230°C for 3 to 4 minutes.
To finish, when the dish is hot, spread the chickpea/water mixture in a single layer of 3 mm. Place in the oven at the middle rack and let cook for about 5 minutes. The dough should be firm and browning at the edges.
