Here is the traditional recipe for Moroccan pancakes known as "thousand holes." These pancakes are so tender and fluffy, a delight for a sweet snack.
Mix the water and salt and dissolve the yeast in it. Add the beaten egg, then the flour and semolina. To mix the flour and semolina well, pour the dough into the blender and blend everything for 5 minutes. Then let the crepe batter rise. It is ready when the surface starts to bubble.
Once the batter has risen, heat a non-stick pan. Stir the batter and pour a scoop into the hot pan. Cook on low heat. Holes should form on the surface of the pancake. When the top is cooked, remove the pancake from the pan and place it on a plate smooth side down. Be sure to avoid stacking them while they are hot to prevent them from sticking together.
To finish, melt some butter in a saucepan, add honey, and mix everything together. Drizzle the mixture over the pancakes and serve immediately.
