Ingredients
 30 Coconut milk
 70 Water
 1 Chicken broth
 300 Sliced chicken
 4 Enoki Mushrooms
 2 Lemongrass
 2 Kaffir (or a zest of lime)
 4 Whole bird's eye chili (or 1 tablespoon of shrimp curry paste)

Pour the coconut milk, water, and the broth cube into a pot and bring to a boil. Add the white part of the lemongrass and the sliced galangal.

Cook for 5 minutes. Then add the sliced chicken, whole bird’s eye chilies, lime zest, and mushrooms.

To finish, let simmer for 5 minutes. Pour in the juice of half a lime and the fish sauce. Continue cooking for a few seconds. Serve the soup in individual bowls. The aromatic garnish is not to be eaten.
