When the herbs are at their peak in the garden, it's time to take advantage of them! This butter works wonders on grilled meat or fish...
Wash, dry, and strip the thyme leaves. In a bowl, mix the softened butter with a fork or pestle, adding the thyme, a pinch of sea salt, and a couple of turns of freshly ground pepper. Set aside in the refrigerator for 30 minutes.
After this time, place the butter on plastic wrap. Roll into a log and refrigerate again until needed.
To use it, melt some of this butter in the pan to sear the chosen red meat, then place one or two slices of thyme butter on the meat on the plate.
To preserve it in the freezer, place portions of thyme butter in ice cube trays. This butter pairs wonderfully with red meats or fish.
