Discover this recipe for a meatball tagine. This recipe for beef meatballs, with potatoes, olives, or vegetables, is deliciously spiced with a homemade tomato sauce flavored with cumin, paprika, and ginger. Perfect for the Ramadan period.
Preparation of the meat Peel and finely chop the garlic cloves and onions. In a mixing bowl, combine the ground meat with the garlic, one onion, and the egg. Add the spices, the washed and chopped mint, and mix again.
Cooking In a pot, heat some oil and sauté the second onion. Add the washed and roughly chopped tomatoes with a little water and let simmer.
Meanwhile, shape small meatballs. Place them in a pot with a little olive oil. Mash the tomato sauce using a food mill, season with salt and pepper, add it to the meatballs, and let simmer until the meat is cooked. Add a bit of water from time to time to achieve a sauce that is more or less liquid.
Serve hot with couscous or potatoes, adding black or green olives if desired.
