Ingredients
 Sun-dried tomatoes
 1 Onion
 4 Mushrooms
 1 Zucchini
 1 Eggplant
 Sugar
 Pine nut
Directions

Sauté the sliced zucchini and eggplant in olive oil for about ten minutes.

Line a tart pan with parchment paper and generously sprinkle with sugar. Thinly slice the onion and distribute it over the sugar. Do the same with the mushrooms. Scatter some sun-dried tomatoes and pine nuts. Finish with the cooked vegetables.

To finish, cover everything with the puff pastry, pricking it with a fork and folding the edges inward. Bake for 30 minutes at 200°C until the pastry is nicely golden.

    I only removed the pie from the mold when it was time to serve, about 4 hours after baking. The vegetables on the bottom are not browned enough; I will try again with more sugar. So it was good, but not sweet enough.

    Very good. For my part, I sautéed the mushrooms and onions with sugar. It was a success. No pine nuts... far too expensive for my retired budget.

    Very very very good recipe We enjoyed it! My suggestion: One zucchini and one eggplant seem like too much; next time I would use half. I didn't add mushrooms because I felt they didn't go with the other vegetables. I would add a little salt and pepper.

    A killer recipe!!! My favorite Guaranteed success every time. Pure happiness. To enhance it, I add red peppers. But even without them, it’s a true delight. Worth making again and again!!!!!

    Hello, I love this recipe but my vegetables tend to release water and therefore don't get that caramelized look. What do you think causes this? I use zucchini, eggplant, and sun-dried tomatoes as vegetables... thank you in advance.
