The day before, hull your strawberries (you can keep the stems to make a syrup), cut them into quarters, and let them marinate with the sugar, vanilla pods, and lemon juice covered.
The next day, the strawberries released juice. Cook over medium heat for about twenty minutes. The strawberries should break down.
Boil for 5 minutes to finish cooking, and add the agar-agar to ensure the jam sets properly.
Finally, pour the jam into your sterilized jars, close them and turn them upside down! Let them cool and enjoy on toast.
