I had no idea at all. An excellent accompaniment for fish or meat. It looks like small pancakes or blinis. Easy to make and absolutely delicious. This recipe is a specialty of a region.
Clean and dry the parsley and spinach leaves. Place all the ingredients in the blender and blend until you get a thick green pancake batter.
Lightly oil the blini pans and heat over low heat until they are hot. Take a ladle of the mixture and let it cook for about 2 to 3 minutes on each side, like blinis or pancakes, until they are golden brown and puffed up.
To finish, once cooked, place them on absorbent paper and keep them warm. Enjoy hot spread with melting salted butter, accompanied by a salad or served with smoked salmon or trout.
