Spicy Duck Gyoza Recipe

Dumpling dough
 250 Type 55 flour
 155 boiling water
 1 pinch salt
The topping
 350 duck strips
 2 cloves garlic
 1 fresh ginger
 100 button mushrooms
 1 carrot
 ½ sliced leek
 1 little red chili
 4 sesame oil
 The juice of a lime
 1 soy sauce
 1 finely chopped scallion
 1 chopped cilantro
 Freshly ground pepper

Prepare the dough. To do this, mix the flour and salt. Make a well and pour in the boiling water. Stir with a wooden spoon, then knead the dough until you achieve a smooth mixture. Cover and let rest for at least 30 minutes.

Slice the duck strips.

Press the garlic through a garlic press. Peel and chop the ginger. Cut the mushrooms into small dice. Peel the carrot and cut it into small cubes. Finely slice the chili as much as possible.

In a hot skillet, sauté the garlic, ginger, and vegetables over high heat in half of the sesame oil. As soon as they start to brown, add the sliced duck breast and continue cooking for 2 minutes. Deglaze with lime juice and soy sauce, then let it reduce until there is no liquid left.

Let it cool, then roughly blend the mixture. Add the chopped green onion and cilantro, season with freshly ground pepper, and mix well.

Using a rolling pin, roll out the gyoza dough on a well-floured surface to a thin layer, then cut out circles of about 8 cm with a cutter. Flour them again to prevent sticking.

Place a small amount of filling in the center of one of the circles. Fold the gyoza in half to form a half-moon and seal the edges together by making small pleats.

Continue until you run out of the dough circles and the filling.

To finish, heat the remaining sesame oil over medium heat in a pan and brown the gyozas, flat side down, for 1 to 2 minutes. Add water halfway up and cover with a lid. Continue cooking for about 5 minutes until the water has completely evaporated. Serve the gyozas hot.
