For the poached egg: Boil water in a saucepan with two tablespoons of white vinegar.
Crack the egg into a small dish. Wait for the water to boil, then lower the heat, gently pour the egg into the pot, and return to high heat.
Cook for 2.30 minutes over medium heat after one minute.
Fill the sandwich with the bread previously warmed in the oven: Spread with harissa (to taste) Add diced tomatoes Sliced olives Capers Preserved lemon Shredded tuna
To finish, place the poached egg in the center. Add the top of the bread, press down slightly, and enjoy!
