Shrimp and Bean Sprout Fritters Recipe

Whether for the Chinese New Year or for Mardi Gras, these donuts will fit perfectly into your menus. Very indulgent and delicious, crispy and airy, they can be served as an appetizer, a starter, or as a main dish, accompanied by your favorite Asian sauce (sweet chili for me).

Ingredients
 280 sifted wheat flour
 40 rice flour (or cornstarch)
 ½ Salt
 1 Sugar
 1 Carrot
 4 chopped chives
 2 large eggs
 340 cold water
 230 peeled raw shrimp
 1 Baking powder
 oil for frying

Cut the shrimp into pieces. Peel the carrot and grate it using a large hole grater. Wash the soybean sprouts thoroughly and spin them dry in a salad spinner.

In a bowl, add the two flours, salt, sugar, grated carrot, and chopped chives. Mix.

Add the eggs, cold water, and fish sauce, and mix again to achieve a smooth texture.

Add the bean sprouts and the shrimp and mix to combine. Do the same with the baking powder. The mixture is quite liquid, which is normal.

Heat a frying bath and cook the doughnuts, one tablespoon of batter per doughnut, until they are nicely golden.

Place on a plate with paper towels to remove excess oil.

To finish, serve immediately with your favorite Asian sauce.
