For a snack, a unique and tasty breakfast or brunch, try this recipe for green pancakes with pandan cream.
Pancakes: Wash 10 leaves of pandan, then blend them with 250 ml of water. Strain the mixture and press the leaves to extract all the juice.
In a bowl, combine 120 ml of pandan juice (save the remaining juice for the pandan cream), cane sugar, yeast, flour, and salt. Mix.
Add the coconut milk and the eggs. Heat a greased pan. Add 1 ladle of batter over medium heat, cover, and cook on medium heat for about 2 minutes on each side.
Pandan cream: In a saucepan, bring to a boil the remaining 120 ml of pandan juice and the cane sugar.
In a bowl, mix the coconut milk and the tapioca starch, then add it to the pandan juice. Stir over low heat until a smooth and creamy texture is achieved.
Tip: Pour the pandan cream over the pancakes and serve sprinkled with grated coconut.
