Preheat the oven to 240°.
Melt the butter, add the honey, and let it cool slightly.
Mix flour, baking powder, almond powder, salt, and pepper. Incorporate the egg yolks.
Whisk the egg whites lightly with a fork until they start to foam slightly, then fold them into the mixture and add the melted butter. Finally, add the rosemary and crumbled cheese.
Fill the cavities of a well-buttered madeleine mold with the batter (about 1 tablespoon per cavity).
Bake for 4 minutes at 240°C, then lower the oven to 180°C and let it bake for an additional 3 minutes. Unmold and repeat with the remaining dough.
Tip: The madeleines are best when fresh out of the oven. Enjoy them immediately or freeze them and reheat in the oven before serving.
