 600 Salmon fillet
 1 Mango
 1 Avocado
 1 Little tomato
 1 cup Chopped fresh cilantro
 4 Olive oil
 1 Sherry vinegar
 1 Lime juice
 1 Lime
 Salt
 Pepper

Fennel salsa. Peel the mango. Cut it into small cubes. Do the same with the fennel, avocado, and tomato. Place everything in a mixing bowl. Mix in the olive oil, lime juice, vinegar, and chopped cilantro. Season with salt and pepper. Pour the dressing over the mixture. Mix well. Cover the salsa and refrigerate for a while to let the flavors blend.

Preheat the oven to 200°C. Cut the kumquats in half or into quarters depending on their size. Place the salmon in a baking dish. Add the kumquats and drizzle with olive oil. Season with salt and pepper. Bake for about 20 minutes. Serve the salmon with the salsa and enjoy.
