Here is a recipe for olive lovers. Prepare olives with the ingredients of your choice and enjoy them as an appetizer or in a salad. You will just need a little patience before tasting them, as the process requires at least 2 months of marination.

Start by placing the pits in a bowl of cold water and let soak for at least two weeks, changing the water each day.
Drain and dry them in a clean cloth and place them in a jar.
Bring the water to a boil with salt, thyme, bay leaves, and cloves (and others to taste) for 15 minutes.
Let cool, place the cleaned olives in the jar, and cover them with this brine.
Close and store in a dark place for at least 2 months.
Finally, before consuming your brined olives, remember to thoroughly rinse them in clear water.
