Ingredients
 40 Goat cheese
 ¼ Red onion
 1 clove Garlic
 4 Cherry tomato
 50 Vegetable broth
 25 Water
 100 Spinach
 ¼ Fresh basil
 Salt
 Pepper

Peel and finely slice the onion and garlic. Rinse the tomatoes. Remove their stems if necessary. Bring the vegetable broth and water to a boil in a large pot.

Dive in the penne, the spinach, the onion, the tomatoes, and the chopped basil.

Allow to cook over medium heat for 10-12 minutes, until the broth has evaporated and the pasta is cooked al dente.

Grate the goat cheese.

Drain the contents of the pot and serve hot on a plate. Sprinkle with shavings of goat cheese and enjoy.
