 250 Carrot
 250 Turnip
 300 Potato
 250 Leek
 1 Vegetable broth
 2 Red onion
 2 Shallot
 Espelette pepper
 Salt
 Pepper

Peel the carrots, wash them, and cut them into slices. Peel the potatoes, wash them, and cut them into large cubes. Peel the turnips, wash them, and cut them into large cubes. Wash the leeks, and cut them into thin slices. Peel the onions and shallots, and finely chop them.

In a large pot, heat some olive oil. Add the onions and shallots, and let them cook for a few minutes over low heat until they become translucent. Add the carrots, turnips, leeks, and potatoes. Add the vegetable broth, and let it cook for about 25 minutes, until the vegetables are fully cooked.

Blend the vegetables, adding the amount of broth to achieve the desired consistency. Add salt and pepper, and chili to taste.
