Soup is a must-have in winter. And even if it may have a negative image, with the idea of being an outdated and old dish, we can make it a delicious and modern dish. This soup is a winter classic, with chili adding a kick. To give it a more gourmet touch, we dare to add some nuts on top or a sprinkle of granola.

Ingredients
 500 Potato
 400 Carrot
 1 Onion
 300 Leek
 1 Vegetable broth
 Salt
 Pepper
 Espelette pepper
Directions
1

Peel the onion, slice it. Wash the leeks, cut them into thin rounds. Peel the potatoes, cut them into cubes. Peel the carrots, cut them into rounds.

2

Heat the vegetable broth. Add sliced carrots, chopped onion, leek rings, and potato cubes. Add salt and chili powder. Let cook for about 20 minutes until the vegetables and potatoes are well cooked.

3

To finish, drain while preserving the broth. Blend the potatoes, carrots, and leeks, adding vegetable broth gradually to achieve the desired consistency. Add pepper and adjust the seasoning with salt and spice.
