A recipe for wild strawberry sorbet.

 250 Wild strawberry
 50 Sugar
 1 Lemon juice fillet

Remove the green tops of the strawberries: it is generally unnecessary to wash them. If you find them gritty, rinse them quickly without soaking, and drain them.

Blend them finely with the sugar, add a bit of lemon juice, and place in an ice cream maker.

Churn until the ice cream is set. Enjoy immediately, or pour into an airtight container and keep in the freezer.

You can, if you want, pass the strawberry puree through a fine strainer before churning it to remove the small seeds, but it is advisable not to do so. The seeds give the sorbet a pleasant texture.

To finish, serve this sorbet with cookies or lace pancakes, or enjoy it on its own.
