A brookie with white chocolate combines the softness of a brownie and the crunchiness of a cookie.
Preheat your oven to 180°C and line a 20x20 cm square pan with parchment paper.
Melt the white chocolate and butter in a double boiler or in the microwave. Stir until the mixture is smooth and well combined.
In a large bowl, whisk the sugar, eggs, and vanilla extract until the mixture is light and frothy.
Add the melted white chocolate mixture to the egg mixture and stir until smooth.
Sift the flour and baking powder into the bowl containing the chocolate mixture and gently stir until the ingredients are well combined.
Add the additional chocolate chips and mix gently.
Pour the batter into the prepared pan and spread it out evenly.
Bake for about 25 minutes or until the brookies are lightly golden around the edges.
Finally, let them cool completely in the mold before cutting them into squares.
