A simple recipe that delights the taste buds.
Preheat the oven to 190 degrees. In a mixing bowl, combine the flour, sugar, and butter cut into small pieces. Mix the ingredients with your fingertips until a ball forms.
Flatten the dough by hand to a thickness of 1 cm. Take 4 small cookie cutters and cut out small circles of dough. On a baking sheet lined with parchment paper, place the dough circles and bake for 15 minutes.
Melt the white chocolate in a bain-marie and mix it in a bowl with the mascarpone. Peel the clementines.
To finish, for the plating, put the chocolate cream in a piping bag. Pipe on the cooled tart bases some peaks of white chocolate cream. Place segments of clementine and garnish with a mint leaf.
