Soaking the beans The day before, soak the white beans in a pot filled with water.
Cooking the beans Place the "soaked" beans in a pot, cover with water. Bring to a boil and let simmer for 45 to 50 minutes on low heat. The beans should be very tender.
Preparation of the tomato sauce Meanwhile, in a non-stick skillet, pour in the crushed tomatoes and their juice, add the crushed garlic, thyme, bay leaf, salt, and pepper. Let the sauce reduce and simmer for 15 minutes.
Mix the beans and the sauce. Once the beans are cooked, drain them. Then, add them to the tomato sauce. Mix everything well.
Serve immediately while hot, accompanied by pork ribs, sausages, or a piece of liver.
