Waffles
 2 eggs
 10 AOP olive oil
 25 milk
 220 type 65 flour
 1 Baking powder
 ½ black olives AOP
 115 Grated cheese
 2 yellow onions
 A few sprigs of fresh thyme.

Prepare the whipped cream with olive oil by pouring the ingredients into a siphon. Make sure it is well sealed before inserting the gas cartridge, then shake vigorously. Set aside in the refrigerator.

Peel and chop the onions. Sauté them in a pan over low heat with a drizzle of olive oil until they are nicely browned. Allow to cool.

Carefully pit the olives and cut them into pieces. Strip the thyme leaves by sliding each stem between your thumb and index finger.

In a mixing bowl, combine the eggs, olive oil, and milk. Gradually incorporate the flour and baking powder to avoid lumps. Once you have a smooth batter, add the caramelized onions, grated cheese, and olives. Season with thyme, salt, and pepper, and mix gently.

To finish, preheat the waffle maker and oil the plates if necessary. Use one ladle of batter per waffle and cook for about 4 minutes according to your preference (and the waffle maker). Place the cooked waffles on a rack and continue the operation until the batter is used up. Enjoy without delay, accompanied by whipped cream with olive oil.
