A very simple and delicious recipe for baked potatoes mixed with good cheese and topped with various vegetables.
Preheat the oven to 200°C. Prick the potatoes and then bake them for a good hour.
While cooking, slice a dozen pickles into small rounds. In a bowl, mix the vegetable medley, chickpeas, and pickles with 3-4 tablespoons of mayonnaise.
Once out of the oven (check that the potatoes are well-cooked by piercing them with a knife; the center should be tender), open the potato from the top by making a slit with a knife.
While it is still hot, add a small knob of butter and about 40g of grated cheese per potato. Then, using a butter knife, mix the cheese with the potato to create a sort of smooth mash. Be careful not to damage the outside of the potato for a nice presentation.
Once we have our cheese purée, make a hole in the middle of the potato and add the mixed pickles, mushrooms, and corn.
You can add the vegetables and raw items of your choice. Eat while it's still hot. Enjoy your meal.
