With a vegetable peeler, shred strips of carrots and zucchini. Cook the carrots in the microwave for 2-3 minutes, and the zucchini for 1 minute.
In a bowl, mix eggs, cream, and ricotta. Season with salt and pepper.
Fill the mini molds halfway with the mixture. Roll the strips of carrot/zucchini/carrot alternately. Pour the remaining mixture over the top.
To finish, bake for 15-20 minutes at 180°C.
