Nothing beats homemade pizza tomato sauce for weekend (or weeknight) pizza nights. This recipe is super easy to make. Prepare this sauce during the peak tomato season (June to October) to fully enjoy the flavors. You can prepare jars of pizza tomato sauce in advance and sterilize them for storage.
Wash the tomatoes and make a cross incision on the skin. Dip them in boiling water for 2 minutes to make peeling easier. Submerge in cold water. Drain. Peel.
Cut the tomatoes. Chop the garlic. Slice the onion.
Cook the tomatoes for about 10-15 minutes over medium heat in olive oil with garlic, onion, thyme, bay leaf, and oregano. Optionally add sugar. Season with salt and pepper.
To finish, remove the thyme and bay leaf. Blend very finely in a blender. Pour into jars and let cool before topping your pizza.
