A recipe for savory tiramisu. This is an opportunity for you to try the savory version of tiramisu. This recipe made with foie gras, gingerbread, and porcini mushrooms will surprise you!
Preparation of the foie gras cream: Separate the egg whites from the yolks, crumble the foie gras and then mix it with the yolks. Add the mascarpone and mix until you achieve a smooth consistency. Gently fold in the whipped egg whites in three additions, being careful not to break them. Add chili powder, salt, and pepper. Reserve in the refrigerator.
Preparation of the mushrooms: In a skillet, sauté the mushrooms in a knob of butter. Add some chives, season with salt and pepper. Let cool before assembling.
To finish assembling the jars: Place a layer of mushrooms, a slice of spiced bread, and another layer of mushrooms. Add the foie gras cream and small cubes of foie gras. Sprinkle with chives and pink peppercorns.
