 3 Eggs
 55 Melted butter
 15 Flour
 25 Cornstarch
 ½ Baking powder
 12 Hot water
 2 Tarragon
 50 Gruyere
 Salt

Preheat the oven to 180°C. Separate the egg whites from the yolks. Beat the yolks with hot water until they double in volume. Add the flour, cornstarch, baking powder, and mix well.

Incorporate the melted butter, tarragon, cheese, salt, and pepper. Whip the egg whites until stiff, then add them to the mixture, folding gently.

Line a 28 x 22 cm baking tray with parchment paper, pour in the batter, and bake for 10 to 12 minutes. Remove from the oven, roll it in a damp cloth widthwise. Let it cool.
