Incorporate the melted butter, tarragon, cheese, salt, and pepper. Whip the egg whites until stiff, then add them to the mixture, folding gently.
Line a 28 x 22 cm baking tray with parchment paper, pour in the batter, and bake for 10 to 12 minutes. Remove from the oven, roll it in a damp cloth widthwise. Let it cool.
