A different way to enjoy tomatoes and mozzarella... Contrast of hot and cold, flavor of basil, crunch of toasted breadcrumbs... Excellent!

Ingredients
 4 125 g of buffalo mozzarella
 500 red and yellow cherry tomatoes
 basil
 1 sugar
 10 olive oil
 Salt
 freshly ground pepper

Wash, dry, and then cut the tomatoes in half. Sauté them in half of the hot oil for 10 minutes, stirring continuously with salt, pepper, and sugar. Crumble the bread. Brown the crumbs in another pan with the remaining olive oil. Set aside.

Cook the pasta al dente in boiling salted water. Drain them (saving a bit of the cooking water) and add them to the pan with the tomatoes along with 2 tablespoons of the cooking water. Mix well.

Divide among 4 hot individual dishes. Place a ball of mozzarella in the center of each dish.

Serve immediately, sprinkled with breadcrumbs and small-leaf basil.
