Discover this recipe for squid strips with curry and coconut milk. Served with scallops and shrimp, a leek fondue, and rice, you have a delicious dish to enjoy for two or with friends in individual servings.
Preparation of the ingredients After rinsing them under cold running water to remove any small skins (which will not float in the water), immerse the squid slices in a pot of boiling water. Let them cook over medium heat for at least 15 minutes.
Remove the thick peels that will come off more or less easily, then cut them into large cubes.
Cooking In a non-stick pan, add the carton of milk or coconut cream, the curry, pepper, and salt.
Mix, then add the seafood one by one, starting with the squid rings, then after 5 minutes, the scallops for 2 to 3 minutes, and finally the cooked shrimp. Let everything cook for another 3 to 4 minutes while stirring occasionally.
Serve with a stir-fried leek fondue cooked in sesame oil and/or steamed basmati rice, molded on the plate for presentation.
