Rinse and then remove the stems from the spinach leaves.
Peel and finely chop the shallots.
Sauté the shallots in butter for a few minutes. Add the fresh spinach and then let cook for 5 to 10 minutes.
Season with salt and pepper, mix directly in the pan using a wooden spoon, then let cool for a few minutes.
Meanwhile, pour the butter and flour into a saucepan, melt over low heat, then add the milk and the gourmet blend.
To make the wraps, lay out a first sheet on your work surface, and brush the sheet with melted butter using a pastry brush.
Place a spoonful of spinach, add a spoonful of cheese sauce. Fold each side toward the center over your filling to form a rectangle. Repeat the process.
To finish For cooking: Heat a little butter in a non-stick skillet, place your rectangles of pastry and cook for a few minutes until they become crispy.
