 3 Egg white
 30 Flour
 100 Powdered sugar
 1 Cocoa
 100 Walnut kernel

Preheat the oven to 180°C.

Preparation of the dough: Grind the walnuts into a powder using a food processor or blender. Melt the butter over low heat until it takes on a lovely hazelnut color. Stop the cooking by placing the pot in cold water, then strain the butter. In a mixing bowl, whisk the egg whites with the sugar until foamy. Add the flour, walnut powder, cocoa powder, and finally the strained hazelnut butter. Mix well.

Let the dough rest in the refrigerator for 1 hour.

Baking soft financiers Lightly butter the financier molds. Distribute the batter into the molds and bake for 15 minutes.
