Candlemas is on February 2nd. After Christmas, New Year, and Epiphany, it's time for pancakes to take their place in your kitchen. Here is a simple recipe with almond milk. This milk gives an incomparable creaminess compared to cow's milk. They are not dry and are flavorful! I preferred to make them small because I find it more sociable, and we can have fun changing the fillings for more indulgence.

 250 Flour
 1 pinch Salt
 1 Oil
 1 Sugar
 2 Egg
 550 Almond milk (with salted caramel if possible)

In a food processor or mixer: place all the ingredients in the bowl and blend for 20 seconds on speed 6. Let the dough rest for at least 30 minutes (I never do this, oops).

Let the dough rest for at least half an hour (I never do it, oops). The dough should have the consistency of a liquid cream. If it seems too thick, add a little milk.

Finally, butter a pan and make the pancakes!

    Make it sugar-free so you can spread something sweet (like peanut butter, for example). I just added a little vanilla extract to the batter (which is preferable to the one with milk in case of cholesterol).

    These pancakes have become my favorites. Soft and easy to digest without lactose, they can be enhanced effortlessly since I replace sugar with a packet of vanilla sweetener and use vanilla almond milk... Hmmm, we love them for a snack, dessert, or breakfast.

    Works very well with both savory and sweet dishes, and the almond flavor is not very pronounced, almost resembling a classic pancake batter. I recommend it!

    Great, made with almond milk that has a very light taste, I added two small caps of rum for fun, I am delighted and the kids are too.
