Wash the lamb liver. Place it on a grill and cook for 5 minutes on the barbecue. It should not be cooked completely. When the liver starts to change color, remove it.
Cut the lamb liver into large cubes. Sprinkle with salt and cumin and mix well.
Take the sheep casing (only choose the very fine part) and cut it into strips. Sprinkle with salt and cumin and mix well.
Wrap each cube of lamb liver in a strip of caul fat (wrap just once and cut).
Skewer your cubes of liver on skewers.
To finish, cook your lamb liver cubes on the barbecue until they are nicely browned.
