To impress your guests, prepare this delicious recipe of scallops with grapefruit butter. Perfect for a festive appetizer, this recipe, which is easy to prepare, will delight your taste buds.
Start by peeling and segmenting the grapefruits. Squeeze the remaining grapefruits and set the juice aside.
Wash and finely chop the fennel. In a bowl, mix it with 3 tablespoons of olive oil, 3 tablespoons of sherry vinegar, and a pinch of salt and pepper.
Mix and add fresh coriander. Keep a few leaves for garnish.
In a hot pan, add a drizzle of olive oil, then sear the scallops for 1 minute on each side.
Remove the scallops from the pan, then deglaze with grapefruit juice. Let it simmer slightly and add the butter to emulsify the sauce. Season with salt and pepper.
Place a tablespoon of fennel salad in the previously washed shell, add 3 scallops, and then drizzle them with grapefruit butter.
To finish, top with some cilantro leaves and pieces of fresh grapefruit.
