 Organic fruity olive oil
 Salt

Preheat the oven to 180°C. Place the garlic cloves in a bowl, add a good drizzle of fruity olive oil and set aside. You can prepare this step in advance. A pinch of salt. Mix, pour into a dish, and bake for about an hour.

Rinse the scallops under cold water and pat them dry with paper towels. Set aside on a plate.

Keep the 6 most beautiful and largest shells to present the starter. Scrape them and rinse them under cold water, then dry them with a clean cloth.

Start preparing the appetizer at the end of cooking the garlic or just before sitting down to eat. It’s very quick, and when the nuts are fresh, there's no need to cook them too much, just sear them.

Pour some fruity olive oil in a large skillet and cook the scallops for a few minutes on each side.

To finish, place 3 scallops on a shell, sprinkle with parsley, season with salt and pepper, and add 2 cloves of confit garlic. Enjoy with country bread.
