Ingredients
 8 Sausage (chipolatas)
 1 Small smoked sausage
 1 Onion
 2 Grated fresh ginger
 3 Olive oil
 4 Chopped tomato
 2 Pinch of turmeric
 2 Pinch of cumin
 Espelette pepper
Directions

Brown the onions with the oil in a pot. Add the sausages cut into pieces. Then add the garlic, ginger, and tomatoes. Mix well.

To finish, add thyme, turmeric, and cumin along with a little water. Cover and let simmer on low heat for about half an hour. I served this dish with fragrant rice and garnished it with fresh coriander leaves.
