A little idea for an appetizer: savory pancakes with cheese and grated cheese. Perfect to accompany spreads. And always without eggs or gluten.
In a mixing bowl, combine the flours, starch, and baking powder. Gradually pour in the milk, stirring vigorously to avoid lumps. Add the cheeses, melted butter, pepper, chives, and salt. Stir and let it rest for 30 minutes.
To finish, heat a lightly buttered skillet and pour in some batter. Let it cook, then flip the pancake. Repeat until all the batter is used up.
