A recipe for cod rougail straight from the island. Easy to make, a pure delight from the islands!
Place the cod in a large pot and cover with cold water. Add the herb bouquet and bring to a simmer. Let it cook gently for 10 minutes. Drain and cut the fish into pieces.
Heat the oil in a sauté pan and sweat the peeled and chopped onion. Add the crushed tomatoes, peeled and sliced garlic, and diced pepper. Season with salt and let simmer for 15 minutes.
Incorporate the cod, add the rinsed and chopped chives, and continue cooking for 10 minutes over low heat. Serve immediately.
