Ingredients
 8 Salmon
 ¼ Preserved lemon
 100 Fresh goat cheese
 4 Dill
 10 Chives
 Salt
 Pepper

Check that the salmon fillets are free of bones by running your finger over the flesh; if any remain, remove them with pliers. Season with salt and pepper.

Chop the candied lemon.

Mix the goat cheese with the preserved lemon, chopped dill, and chives, then season with salt and pepper.

Spread the mixture on the flesh of 4 salmon fillets. Place the 4 other fillets on top, flesh side down on the first fillets spread with the mixture, and tie them well.

Place the salmon fillets in the steamer basket on a bed of sprigs of dill and chives and cook for 7 minutes.
